You know what would make email substantially more energy efficient without cutting back on the number we send? Default to plain text and - most importantly - don't quote the source in replies. Those of us who recall how to do it right live in hiding anyway.

You know who could make a real difference here? The Gmail folks. Energy efficiency could be a nice way to make up for that UI!
